Brown Sugar Pecan Meringues

120g egg whites (3 large could be as little as 105g)
150g brown sugar
1/8tsp cream of tartar
3/8tsp cinnamon
pinch of salt

100g pecans (toasted and ground)
2tsp cocoa powder

preheat oven to 225F

Whir sugar, cinnamon, cream of tarter and salt in the food processor til well combined and the sugar is broken down a bit smaller.

Start beating eggs with whisk (in mixer) until they start getting frothy then add sugar slowly. beat 5-7 minutes with all sugar included.

Meanwhile grind up pecans and cocoa powder in food processor.

Fold pecans into egg mix.

Blop or pipe onto parchment

Bake 20 minutes, then turn oven off and let it cool with meringues still in it.
